What is Vitamin A?

The compounds that form this nutrient are: retinoids (preformed Vitamin A) and cartenoids (which convert in our body to Vitamin A). Vitamin A is an anti-oxidant and it plays an important role in immune system function. It helps protect the body from cardiovascular disease and cancer; it is needed for the growth and maintenance of the skin, and it is essential for the proper function of the eye.

Vitamin A Food Sources:
Retinol is found only in animal foods like
Butter
Egg yolks
Liver and
Cod-liver oil

Many fruits and vegetables also contain carotenes which can then be converted into retinol. They are usually yellow, red or orange. The most important carotene is beta carotene which is found in:
Carrots
Red peppers
Sweet potatoes
Spinach
Mangoes
