Summer Fresh Watermelon Tomato Salad

When I first saw this recipe through Dr. Weil's website, I was intrigued but uncertain about the combination of Watermelon and Tomatoes.  After trying it, I must admit it is the perfect, most refreshing salad for a hot summer day.

I've adapted this recipe to make it a little easier to serve.  I think I prefer using basil over the mint, but both versions are lovely.  Only use fresh mint or basil, otherwise you won't get the same results.

This recipe makes 1 large serving or 2 smaller servings.  The general ratio is 1 1/2 parts watermelon to 1 part tomato.

 

1 medium diced tomato (heirloom tomatoes are best for the colour contrast)

1 1/2 times chopped seeded watermelon

1 tsp thinly sliced white onion (thin slices work better than diced)

1 tbsp olive oil

1 1/2 tbsp red wine vinegar

sea salt &fresh ground pepper to taste

12 chopped fresh mint leaves or fresh basil

 

Place watermelon, tomato and onion in a bowl, mix well.  Mix remaining ingredients in a bowl.  Toss watermelon mixture with dressing and enjoy right away!

This salad needs to be eaten within 24 hours, otherwise the watermelon juice seeps out of the melon and the fruit and vegetables become soggy.
